Banana Protein Pancakes

Ingredients

100ml almond milk
60g self-raising flour
60g banana-flavoured protein powder
1 tsp baking powder
1 egg
Spray light oil for cooking

TOPPINGS
1 small banana, sliced
2 tsp low-calorie flavoured syrup of your choice

Directions

1. Using a balloon whisk, beat all the pancake ingredients together in a large mixing bowl to make a thick and smooth batter.
2. Heat a non-stick frying pan over a medium heat and lightly coat the base with spray light oil.
3. Spoon a small ladleful of batter into the frying pan and cook for 2–3 minutes on each side until golden brown. You should be able to tell when the first side is cooked as little bubbles will start to form on top of the batter. Repeat until all the batter is used.
4. Decorate your pancakes with slices of banana and a drizzle of low-calorie flavoured syrup (we like caramel or popcorn flavoured, but anything goes!).
